Every bottle of Signatory offers unique characteristics showcasing the special flavor, color, and age profile of a single cask. They also specialize in non-chilled filtering. Chill filtering is a process done by most large distilleries that removes the majority of the natural fats and oils found in a malt, giving a cloudy haze to the liquid. Signatory does not chill filter in order to preserve the distinct natural flavors and body of the scotch.
