Using the same base of 4 native cane varieties grown on the island, the team at Distillerie Poisson allows the freshly harvested and pressed cane juice to ferment for 72 hours prior to distillation. Maturation is done entirely on the island in 200 liter oak casks. For this release, all rums are aged for a minimum of 6yrs prior to blending and bottling.
